A summer favourite - Salmon, potato salad
I love this summer salad, I’ve got it on repeat.
We all know Omega 3 is an important nutrient in our diets and most also know that fish in contains lots of this beneficial oil. Salmon is of the fattier fishes and thus contains higher levels of this good oil. So what's the benefits of Omega 3? Well that list is long and seems to be growing. The main benefit is that it helps support our cardio vascular system which includes our heart and blood vessels and arteries, reducing cholesterol and protects again inflammatory diseases such as arthritis. It is also essential to the function of the brain.
To feed two:
200g salmon file (warm smoked or steamed)
6 medium sized potatoes
100g frozen peas
4 stalks of dill
optional - 1 handful of mixed salad leaves or baby spinach leaves
optional - 1 avocado
Lemon mustard Vinaigrette
juice from 1 lemon
1/2 tsp dijon mustard
salt and pepper
1 tbsp cold pressed sun flower oil (contains Vitamin E which is good for among other things the skin)
1 tbsp cold pressed extra olive oil
Mix the lemon juice with the mustard in a large salad bowl, add the salt and pepper and then the oil, until it has a thick constancy, so called emulsified.
Wash and cook the potatoes, towards the end of the cooking time add the peas. Allow the potatoes to cool slightly and then cut into halves or quarters and add to the bowl and vinaigrette.
Halve the avocado and cut into cubes or scoop directly into the bowl.
Wash the salad and chop the dill, and to the bowl, mix and eat!
